Pickings
the grapes are handpicked in several waves from late September
to the end of October in order to harvest only the ripest, most botrytised grapes. This method entails very low yields, but
produces a level of quality acknowledged by numerous experts.

and oak
barrels

and in bottles.
Serving
suggestions
Apéritif,
foie gras, cold vegetable salads with vinegar dressing,
white meats, strong cheeses (goat, Roquefort, Pyrénées), and
chocolate desserts.
Our tasting
notes this
wine has amazing dried fruit,
apricot, vanilla and citrus aromas. Its sweetness is
balanced by fresh acidity and alcohol, and the very long
aftertaste is reminiscent of tropical fruit. This wine is quite
rare, especially as we do not produce it every year to ensure
optimum quality, similar to that of a Sauternes
AOC.
You can keep it in bottles 15 years.
