Château LE SENS
(14 hectares) is located in Saint Caprais de Bordeaux, 18
kilometres from the
Bordeaux
city, in the PREMIERES COTES DE BORDEAUX appellation (AOC).
The terroir has a high proportion of gravel mixed with
layers of clay over limestone subsoil. The vines benefit from
the mild, damp climate, with prevailing winds from off the
Atlantic Ocean.
Vineyard
management:
integrated pest and disease control, cover crop, sucker removal,
manual leaf-thinning, shoot-trimming, as well as hand- and
machine-harvesting with sorting.
All the Chateau LE SENS wines – red, clairet,
and white – are very fruity. The Premières Côtes de Bordeaux is
deeply-coloured, with elegant aromas and a great deal of
softness on the palate, with an ageing potential similar to that
of the greatest wines :

Château Margoton
vineyard
(5 hectares) is located in the commune of
Tabanac, in the heart of the CADILLAC appellation.
Situated on a gravely rise covering a layer of dense clay, the
steep slope (35°) ends in a limestone wall with several
underground quarries going back to the Middle Ages. These long
supplied the city of Bordeaux with building material.
From an altitude of 100 metres, the estate overlooks not only
the Garonne River, the Graves region, and the Landes de Gascogne
forest, but also the Pyrenees mountains where comes from the
gravel.
The vineyard has wonderful south-facing sun exposure and is
caressed by westerly winds.
These winds also serve as a sort of natural fan to dry the
grapes after the vine leaves have been thinned several times to
encourage the development of "noble rot" (botrytis) and
concentrate flavours.

noble tradition of all the great sweet white wines of Bordeaux
(Sauternes, Barsac, etc.),

The Vignobles Courrèges cellars are
divided into four
buildings
:
The oldest
one
(dating back to the 18th century) is
typical of the Hauts de Garonne region. It is made of stone from
a nearby quarry and houses ageing vats as well as a tasting
room.
The second
cellar is devoted to fermentation in
stainless steel tanks
with controled temperature.
The third
one
has 60 barrels made from
fine-grained Allier oak
(France). The wine receives constant attention
here and the temperature remains the same all year round.
Part of the wine made at Château Le Sens and Château Margoton is
aged in these barrels.
The pores in the oak
let some of the wine evaporate. Referred to as "the angels'
share", this must be replaced every two weeks by topping up in
order to avoid oxidation.
The
last
build
is used to
keep, for
aged, bottled
wine
under temperature-controlled and prepare your order. It also contains an area where equipment is kept.
